Chicken and chorizo stew

Here is our recipe for chicken and chorizo stew:

Ingredients (serves 2-4 depending on appetite):

1 white onion finely chopped

3 garlic cloves peeled and chopped or crushed

olive oil

3 chicken breast steaks cut into strips or chunks (we used the flat ones not the whole breast pieces, if you use whole chicken breast 2 would probably be enough)

1/2 a large stick of chorizo sausage sliced into small discs

1 teaspoon of paprika (we used hot but any will do)

1 400g can of beans (butter beans are best but we didn’t have any so we used borlotti but you can use whatever you have to hand)

1 400g tin chopped tomatoes

salt and pepper to taste

Instructions:

Fry off the chopped onion and garlic in some olive oil until soft

add the chorizo discs and fry until the orange oil is released then add your chicken and brown it off in the pan

Add the paprika and cook for a further 5 minutes

add the chopped tomatoes and beans and bring to a boil

Now you can either cook this in the oven at 200 degrees for around 40 mins (you may need to add a cup of water half way through) or you can do as I did and put in the slow cooker on low for however long you need but a minimum of 3 hours (I put mine in at around 10 am and we ate at 6.30pm)
