We have recently been attempting to reduce our food bill as we are trying to save a bit of money and one of the ways we are hoping to achieve this is to reduce food waste.
We brought some chocolate brioche rolls for Joe but he didn’t eat them and we ended up with a pack of stale brioche but rather than throw them away I made a tasty Chocolate brioche bread and butter pudding which I served hot with custard. A great way to use up leftovers and also a brilliant meal for Joe to increase his calorie intake with milk, eggs and chocolate!
1 pack of chocolate brioche (or any other breaded/pastry items that are going stale i.e fruit loaf, croissants, pan au chocolat etc (equivalent to 1/2 loaf of bread)
a few knobs of Butter
Preheat oven to 190 C / Gas mark 5 and lightly grease a large baking dish. Cut the brioche in half lengthways and butter them like you would a slice of bread.
Layer the brioche slices in the dish adding a handful of sugar as you go, covering each slice in a good dusting.
Mix the milk and eggs together and whisk.
Pour over the brioche and leave to absorb for at least 10 minutes.
Bake in the oven for 35 to 45 minutes, until the pudding is set and browned.
Serve with custard and enjoy!
