Spanish omelette: easy mid-week dinner

Here is a highly adaptable, quick and easy store cupboard meal that is a great way of secretly getting vegetables into your toddler whilst also providing lots of protein and energy from the eggs!

Heres how we made ours but you can substitute the veggies for whatever you have to hand, or add meat if you desire like chicken or chorizo sausage!

(serves 4)

Ingredients 

3 potatoes

olive oil

2 red onions

1 red pepper

2 cloves of garlic

2 tomatoes

8 eggs

and a handful of coriander leaves

chopped fresh chives

pimento (paprika)

salt and pepper (to taste)

Method

Chop the potatoes into small cubes and par boil in a saucepan of cold water- so they are soft but not cooked fully.

In a large thick bottomed pan heat up the olive oil and fry off the chopped onions, pepper and chopped garlic. When they have softened add the pre-cooked potatoes and a teaspoon of paprika. Fry until coloured then add the chopped tomatoes simmer until cooked. Turn the heat down then add the eggs that have been whisked together and seasoned with salt and pepper to taste (you could add chilli flakes here if you like it spicy but remember toddlers may not like it too spicy!)

Cover the pan with a lid and cook until just set. At the end sprinkle over the coriander and chives remove from the heat and serve with salad or whatever you like in slices (mine fell apart but was still tasty)!
